I used your recipe to make this chicken last night. It was superb. I used a Waring deep fryer and made 4-5 pieces at a time. The meat was moist and flavorful and the crunchy coating was delicious. I used your direction with half lemons, and pretty much everything else. Thank you for such excellent documentation and photos. This is a keeper.

I'm cofused! Why does the other blog says you pre-sous vide the chicken before the deep-frying.
What's the real recipe?

I have the same cookbook, and I tried making that recipe! It was pretty complicated and tasty except that a lot of my pieces were a little under :( I'm guessing it's probably because I didn't have my oil hot enough.

I have found that every time I open Keller's ad hoc I want to try something, just to see if his process really makes for a better X. Recipes are simple but they pay attention to details. I think that's what makes them good. This week I made caramelized scallops following his simple method. Brilliant easy scallops. I will be posting them on my blog soon enough. The fried chicken cannot be much farther, especially after seeing your fantastic pictures. You do take excellent pictures for this blog BTW.
