Amateur baker question. As of this moment my Brazo de Mercedes is cooling. Everything went well. My custard  is not too runny (slaved over the double boiler), soft peaks ok with the kitchen aid. No problem rolling. 
However, at the end I noted that I have a &quot;baby cakes version&quot; of the Brazo. My meringue expanded well, then poof!
Did I underbeat the meringue? Not cool it well enough? I did use a Silicon pad to turn it, and the meringue sweated a bit?
Any suggestion for next time?

		<description>Just made Loco Moco for the wife and kids and they loved it! I didn&#039;t have the beef stock so I had to do Pollo Loco Moco using Chicken stock instead. I figured it would be ok with the egg. It tasted great and everyone loved it!! Actually Jun, my wife and step-kids are all Filipino from Cebu City. As soon as they saw your pictures and your website they insisted I make Loco Moco!! Thanks for the great pics and the recipe!! -Stu</description>
