			<content:encoded><![CDATA[<p>I am a huge fan of slow cooking and making things from scratch at home but I have to admit I have one guilty pleasure, among many others, that I certainly cannot live without.  I have an indescribable affection for canned corned beef.   It&#8217;s my comfort food in a can.</p>
<p>Once the delightful aroma of corned beef and onions sautéing in a hot pan of olive oil and butter fills my kitchen I instantly feel so much better.  It&#8217;s a wonderful and comforting feeling that truly reminds me of family and childhood.  It&#8217;s salty, more than anything else, perfectly paired with hot buttered pan de sal (salt bread) or hot fried rice.  Add a fried egg and you have a classic Filipino breakfast although I have enjoyed canned corned beef hash with rice anytime of the day.</p>
<p><strong><em>Canned Corned Beef Hash Recipe</em><br />
</strong></p>
<p>1 can <a href="http://www.facebook.com/pages/Pure-Foods-Corned-Beef/132160082641">Purefoods</a> corned beef, my canned corned beef of choice<br />
1 small onion, finely diced<br />
2-3 small red or yellow potatoes<br />
olive oil and unsalted butter<br />
sea salt and freshly ground black pepper to taste</p>
<p>Peel the potatoes and boil them until they are fairly cooked but not mushy.  Cook them unpeeled, if you prefer, as I do.  Set aside to cool and then finely dice the potatoes.</p>
<p>Heat the olive oil and butter in a large pan or skillet over medium-high heat.  Sauté the finely diced onions until soft.  Add the potatoes and corned beef.  Add salt and pepper to taste.  Stir well, lower the heat, cover the pan and cook for 5 minutes.  Uncover, stir, cover again, and cook for another 5 minutes.</p>
<p>If you prefer your corned beef hash crusty, as I do, raise the heat  to medium-high and cook uncovered.  Stir, let the hash sit for a while and then stir again and continue cooking until it becomes crusty but not burned.</p>

			<content:encoded><![CDATA[<p>Corned beef hash with eggs is one of my all-time favorite breakfasts.  I love my hash chunky and crusty with a good 2-to-1 corned beef-to-potatoes ratio.  Some people add red and green bell peppers and spring onions but I like them plain and simple: corned beef sautéed in olive oil and butter with onions and potatoes.  I don&#8217;t mind making hash with canned corned beef since I actually grew up enjoying this salty shredded goodness but I prefer <a href="http://blog.junbelen.com/2010/03/15/how-to-make-corned-beef-brisket-nitrate-free-at-home/">making corned beef brisket from scratch</a> and then making hash from leftovers.</p>
<p><strong><em>Corned Beef Hash Recipe</em><br />
</strong></p>
<p>1 Tbsp olive oil<br />
1 Tbsp butter<br />
1 small onion<br />
1 lb corned beef<br />
5 small red or yellow potatoes<br />
1/2 cup beef stock<br />
1 tsp yellow mustard<br />
1 tsp worcestershire sauce<br />
pinch of sugar<br />
sea salt and freshly ground black pepper to taste</p>
<p>Finely dice the corned beef and onion.  Peel the potatoes and boil them until they are fairly cooked but not mushy.  By the way, I actually like potato skins a lot so I prefer not to peel my potatoes.  Set aside to cool and then finely dice the potatoes, too.</p>
<p>Heat the olive oil and butter in a large pan or skillet over medium-high heat.   Sauté the onions until soft.  Add the potatoes, corned beef, stock, mustard, worcestershire sauce, and sugar.    Add salt and pepper to taste.   Stir well, lower the heat, cover the pan and cook for 5 minutes.   Uncover, stir, cover again, and cook for another 5 minutes.</p>
<p>Raise the heat to medium and cook uncovered until all the liquid is gone, stirring occasionally.  Raise the heat to medium-high and cook until the hash becomes crusty.  Stir, let the hash sit for a while and then stir again.  I actually prefer quite a crusty hash.</p>
<p>Toast and butter a piece of sliced bread or a muffin.  Top the toast with a generous heap of corned beef hash and lay a fried or poached egg on top.  Enjoy with a tasty cup of coffee.</p>

<p><strong><em>Reuben Sandwich Recipe</em><br />
</strong></p>
<p>rye bread, sliced<br />
butter<br />
Swiss cheese<br />
sauerkraut<br />
Russian or Thousand Island dressing<br />

<p>Butter a slice of rye bread and place the bread, buttered-side down, on a clean surface.  Top with a slice of Swiss cheese and generous layers of thinly sliced corned beef.</p>
<p>Using paper towels, squeeze out excess moisture from the sauerkraut.  Lay a good heap of sauerkraut on top of the corned beef and then top with Russian or Thousand Island dressing.   Finally, top with another slice of Swiss cheese and then another slice of rye bread.  Butter the side facing up.</p>
<p>Preheat a griddle or frying pan to medium heat. Toast the sandwiches on one side until the bread is golden brown. Use a spatula to carefully flip the sandwich over and then toast the other side. Cut the sandwiches in half and serve warm with salty and crispy french fries.</p>
<p>And, of course, don&#8217;t forget the pickle.</p>

<p>I checked the recipe twice and thought I read it right.  Salt peter has been used for the longest time to cure meats.  It gives the meat its distinct red color.  But, seriously, I wouldn&#8217;t add chemicals in my food just to make it look pretty.  After all, the use of salt peter has already been discontinued ever since modern nitrates have been developed.  This is actually a great example that demonstrates why I am a huge fan of making food from scratch at home: you know exactly what goes in your food.</p>
<p><em>Corning</em> is a technique for preserving or curing meat by soaking it in brine for long periods of time.</p>
<p style="background-color: #ebebeb;">&#8220;Curing, no matter which method, involves several processes, the most significant of which is denaturing of the proteins. This happens when salt is introduced to the meats proteins. Proteins are coils and the salt causes the proteins in the muscle fibers to unwind and absorb the extra water trapped inside. Water inside your meat spells trouble because bacteria love water so eliminating it by salting and drying allows for longer storage.&#8221;  &#8211; <a href="http://www.redcatrestaurants.com/corner.php?id=9"><em>Chef&#8217;s Corner</em></a></p>
<p>So what good stuff goes in to the corning solution?</p>

<p>1 (4- to 5-lb) beef brisket, trimmed<br />
2 quarts water<br />
1 cup kosher salt<br />
1/2 cup brown sugar<br />
1 cinnamon stick, broken into several pieces<br />
1 tsp mustard seeds<br />
1 tsp black peppercorns<br />
8 whole cloves<br />
8 whole allspice berries<br />
12 whole juniper berries<br />
2 bay leaves, crumbled<br />
1/2 tsp ground ginger<br />
2 pounds ice (optional)</p>
<p>Place the water into a large stockpot along with salt, sugar, cinnamon stick, mustard seeds, peppercorns, cloves, allspice, juniper berries, bay leaves and ginger. Cook over high heat until the salt and sugar have dissolved.  The aromatic fragrance of the spices is simply amazing.</p>
<p>Remove from the heat and add the ice.   Stir until the ice has melted.  Ice is added to cool down the solution but you can totally skip this and just refrigerate the brine until it reaches a temperature of 45 degrees F.</p>
<p>Once it has cooled, place the brisket in a 2-gallon zip top bag and add the brine.  Seal and lay flat inside a container, cover and place in the refrigerator for at least 10 days.   Check daily to make sure the beef is completely submerged and stir the brine.  If you don&#8217;t have a huge zip top bag, brine the brisket in a large tupperware container and make sure to flip the brisket each day to make sure that all of the brisket comes in contact with the brine.</p>
<p><em><strong>Cooking the Beef Brisket</strong></em></p>
<p>1 small onion, quartered<br />
1 large carrot, coarsely chopped<br />
1 stalk celery, coarsely chopped</p>
<p>After at least 10 days, remove the brisket from the brine and rinse well under cool water.  Place the brisket into a pot just large enough to hold the meat, add the onion, carrot and celery and cover with water. Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender.</p>
<p>Remove from the pot and thinly slice across the grain.</p>
